SUnday Supper Club: Vegan Chili

I know, I know….I’m super late with this post.  I was gonna hold out and just post it this coming Sunday, but I didn’t want to deprive my 2 readers of fabulous vegetarian recipes.  You get one now and – I PROMISE – one this Sunday.  Yay!

Here’s my vegan chili recipe.  So satisfying on those LA autumn days when the temperature drops to a bone-chilling 67º (note my winter tank top and winter flip flops below)

2T olive oil

1 large onion, medium chop

1 C carrot, chopped

1 C celery, chopped

1 block tempeh, chopped in to 1/2″ cubes

1/3 C soy sauce

4c veggie stock, divided

1/2 red bell pepper, med chop

1/2 green bell pepper, medium chop

5 garlic loves, minced

3 T chili poweder

1T oregano

1T cumin

1 t salt

1/2 T paprika

Cayenne pepper, to taste

15oz can diced tomatoes, with juice

approx 1 oz dark chocolate OR 1 1/2 T cocoa powder

1 15oz can kidney beans

1 15 oz can pinto beans

Handful chopped cilantro

Instructions:

Heat olive oil in a large skillet.

Brown onions then add the carrots, celery, soy sauce and 2 cups of stock. After about 3 minutes add the peppers.  Once the stock has absorbed and reduced to about 1/2, add the remaining stock and everything else but the beans.  Cover and let simmer over low/med heat, stirring regularly until the chili has thickened.  Add beans and cilantro, then adjust spices and serve with your choice of toppings.

Just a bit of Friday Joy: Bathing Beauty

Just finished a refreshing shower with Calliope.  She doesn’t really like it, but she doesn’t fight it either.  She climbs into the shower with a really adorable, resigned posture then just stands there while I deep condition her lovely locks.  She turns around when I ask her to and doesn’t try to bust through the shower curtain – even after I get out and wait for her to “shake it off!”  The bathmats seem to bear the brunt of any shower-related dog rage, but honestly, they had it comin’.

There are about a billion reasons to repeal Prop 8 in 2010, but here’s my own, personal reason:

I wish you would/could have been more excited to make what I imagine (based on your inventory) must have been your first wedding dress sale.  I know it was a Tuesday afternoon and “500 Days of Summer” had just let out at the Arclight so you were distracted by flocks of unemployed, sensitive Hollywood guys, but still, Sister, we’re talking WEDDING DRESS here….show a little chutzpah. (Look at me, future in-laws!) I mean, really – you wanna be a girl, you gotta raise your voice the requisite 8 octaves when discussing ANYTHING wedding dress related.  Failing to do so is a bigger tell than any Adam’s Apple I’ve ever seen……

Then I REALLY thought about it……why would any girl (biological or otherwise) get excited for another girl’s wedding if she herself wasn’t allowed to get married???

It’s Fucked Up.  Sorry for the profanity, but there’s no better way to put it.  Fix it.



Sunday Supper Club: Mediterranean Quinoa

I just got bamboozled into spending $14 on a tiny container of feta and sun dried tomatoes at the Farmers’ Market in my front yard.  They are really really good, but $14???  Damn you, charming independent farmer!!!  Here’s what I did with it based on what I had lying around the kitchen.  I think it’d be better with kalamata olives and pine nuts, but I didn’t have another $80 to pick those up….

Ingredients:

1/2 c quinoa, rinsed thoroughly

just under 1 cup water

small bunch of skinny asparagus

small handful crazy-expensive sun-dried tomatoes, chopped

1 T capers

1 T fresh oregano, chopped

1/2 T fresh parsley, chopped

2-3 T olive oil

1 T red wine vinegar

2 T really good feta

Instructions:

Rinse quinoa in a fine sieve for about 30 seconds.  You’ll know it’s done when the water stops foaming.

Add water and quinoa to a small pot and bring to a boil.  Turn down to the lowest setting and simmer until the water is dissolved (about 8 min)

While the quinoa is simmering, chop asparagus into 1 in” pieces and saute in a little olive oil until tender (about 6 min)

Add the sun-dried tomatoes so they’ll be warm.

Combine all ingredients in a bowl and stir.  Top with a little piece of fresh herbs.

Boom.  Done.
