Sunday Supper Club: Mediterranean Quinoa

I just got bamboozled into spending $14 on a tiny container of feta and sun dried tomatoes at the Farmers’ Market in my front yard.  They are really really good, but $14???  Damn you, charming independent farmer!!!  Here’s what I did with it based on what I had lying around the kitchen.  I think it’d be better with kalamata olives and pine nuts, but I didn’t have another $80 to pick those up….

Ingredients:

1/2 c quinoa, rinsed thoroughly

just under 1 cup water

small bunch of skinny asparagus

small handful crazy-expensive sun-dried tomatoes, chopped

1 T capers

1 T fresh oregano, chopped

1/2 T fresh parsley, chopped

2-3 T olive oil

1 T red wine vinegar

2 T really good feta

Instructions:

Rinse quinoa in a fine sieve for about 30 seconds.  You’ll know it’s done when the water stops foaming.

Add water and quinoa to a small pot and bring to a boil.  Turn down to the lowest setting and simmer until the water is dissolved (about 8 min)

While the quinoa is simmering, chop asparagus into 1 in” pieces and saute in a little olive oil until tender (about 6 min)

Add the sun-dried tomatoes so they’ll be warm.

Combine all ingredients in a bowl and stir.  Top with a little piece of fresh herbs.

Boom.  Done.
